Chunky Banana Cookies
- 1 cup all-purpose flour
- 1.5 teaspoons baking powder
- 0.75 teaspoon ground cinnamon
- 0.25 teaspoon salt
- 0.5 cup (1 stick) butter, softened
- 1.25 cups firmly packed brown sugar
- 1 egg
- 2 teaspoons vanilla extract
- 0.75 cups mashed ripe bananas (about 2 large bananas)
- 1.25 cups milk chocolate chips
- 0.5 cup dry roasted, salted peanuts, chopped
- Vegetable pan spray
Preheat oven to 350F. Prepare air insulated cookie sheet with vegetable
pan spray.
In small bowl, stir together flour, baking powder, cinnamon
and salt. In large bowl, beat butter and
sugar with electric mixer until light and fluffy. Add
egg and vanilla; beat until well combined.
Add banana; beat until well combined. Stir in
chocolate chips and peanuts. Drop rounded
teaspoons of dough 2 inches apart on cookie sheet
Bake 10 – 12 minutes, or until edges of cookies are just barely browned.
Cool 3 minutes; remove to cooling grid to cool completely
Makes about 3 dozen cookies
